Mimolette’s striking appearance may remind some of a cantaloupe but it is actually a French copy of Edam. Dyed a deep orange color & allowed to form a natural rind, it is a wonderful cheese to have on any cheese board. Firm though surprisingly creamy texturally, Mimolette has a mild & smooth flavor becoming subtly sharp towards the end. But its most intriguing attribute lies in its exterior: the tiny wholes & texture of the rind are the hard work of harmless cheese mites that gorge themselves while the cheese is aging (the wheels are brushed before shipping to extricate these nits). Historic property in Pomerol, Château Taillefer is one of the crus that were accounted for on the map of France established in 1776 by the geographer of Louis XV. And, since the Napoleonic land register where Château Taillefer, its cellars and its plots were described with the utmost precision, all has been preciously conserved for over two centuries.
The famous iron deposits, characteristic of the terroir of Pomerol, those are at the origin of the name of Taillefer. They impart complexity to the wine together with minerality and aromas of truffles and violets. It was recounted by elders that the plow « toils the iron » from having lifted and turned over countless amounts of iron oxide in the vineyards of Taillefer.

This wine will surprise and impress you with depth and fruit not often seen in the Cote d'Or. The Pinot Noir for this wine is found in the village of Bussieres and is sourced from the lieu-dit "Les Clos". The vines are south-facing at 350 feet above sea level on gently sloping hills that are principally composed of clay. The fruit tends to ripen early due to its excellent exposure.

It's made from 100% Estate grown Pinot Noir vines that average 40 years old and are sustainably farmed in adherence to the guidelines of Lutte Raisonnée. Aleofane is a small Biodynamic Domaine with vineyards in Crozes Hermitage and Saint Joseph. The Domaine was founded in 2004 by Natacha Chave, the younger sister of Yann Chave, who decided to continue the family tradition of wine making after studying philosophy at university. Both of Natasha’s wines have a delicate feel and freshness to them which sits perfectly alongside the warm, concentrated, spicy fruit.

The grapes for this wine are harvested from vineyards that border the Lalande de Pomerol appellation. The grapes undergo a three-day cold maceration; the alcoholic fermentation then proceeds for eight to ten days. The wine is racked several times during its élevage in stainless steel and cement tanks before being bottled after an egg-white fining. The grape composition is predominantly Merlot with a touch of Cabernet Franc in the blend that provides additional structure to the wine.
