Each lot of wine was fermented naturally using native, wild yeast, and the grapes were all crushed by foot so as to not break the stems left in the fermenting must. The finished wine is bright and flavorful, with a fascinating combination of mineral and earthiness. The Carignan fruit is stylish, incorporating elements of wild cherry, plum and black fig, while the Grenache and Mourvèdre add exotic aromas of wild herbs and lavender. This is a project born out of friendship and a longing to return to ones roots. Master Sommelier and proprietor of Miura Vineyards, Emmanuel Kemiji and Chefs Gerald Hirigoyen, Sylvain Portay and Laurent Manrique. In 2010 a winery was finally completed and over time the production will reach a scant 2500 cases but the object here has never been commercial and is instead driven by quality and pride.
The name Clos Pissarra is derived from the Catalan word for slate, as this is the soil that covers the regions of Montsant (sacred mountain) and Priorat (priory), that lie about 85 miles southwest of Barcelona.

Odile Delpon inherited the family vineyards, tobacco farm, and saffron plantation in Albas in 1968. She developed the winery with her husband Claude, until their son Didier Pelvillain took over a few decades ago.
There is less wine made now, but the quality is much higher. Yields are much lower and grape selection is important. Soils here are clay and limestone. Didier farms at the highest level of sustainability and biodynamic conversion is in process. Only indigenous yeasts are used. Vines average 32 years old.
