Schramsberg pioneered the Blanc de Noirs style in the United States, releasing the first such American sparkler in 1967. The key to producing this complex Blanc de Noirs is our vast and varied focus on diverse cool-climate vineyards. Pinot Noir from Carneros and Anderson Valley combine with fruit from low-yielding Sonoma and Marin coastal vineyards to develop a sparkling wine with a breadth of fruitful aroma and flavor. This Cabernet was originally created to showcase the youthful vibrancy of the vines planted by our team when the property was first acquired. With time, however, Encosta has become less about younger vines and more about showcasing the various expressions of our highly dynamic vineyard characteristics.
Tasting Notes: Encosta launches with an intense nose of black cherries, Framboise liqueur, and cherry blossoms. The aromatics continue to elevate with fragrant notes of strawberry preserves, violet crumble, orange zest and forest floor. Persistent and exuberant, the silky texture glides across the palate while the mouth-watering acidity builds and carries the brightness and elegance through the lengthy, flourishing finish. Stunning magenta and youthful purple hue. The wine's fragrance is perfumed, poised and elegant. The more traditional black cherry and cassis fruit that one find in this wine are complemented by intriguing green olive, cigar leaf, and violet floral components that they find throughout their 2018 vintage wines.
Upon the first sip, the bright and luscious black cherry and plum notes consume the palate. Threaded throughout those fruit components are an inviting combination of cocoa nib and dried rosemary, elevating the wine's complexity and power as the wine builds. While the tannins are persistent and firm, the slate-like texture of this wine offers a smooth and elegant finish. While showing well at the time of release, this wine had plenty of time to develop and age gracefully over the next 15-20 years.
