This dry-hopped pale ale takes its name from the Yallarhammer Pavilion, one of the most iconic gathering sites on the Farm with a strong tie to our fly fishing program. Bursting with bold and fresh hop aromas, but light enough for a session, it’s a beer for all seasons.
Super moist Chipotle Morita chili peppers are slowly cooked with Vermont maple syrup and apple cider vinegar to create a distinctive hot, smoky, sweet and tangy flavor, with a luxurious texture.
The non-vintage 10-Year-Old Malmsey has an introspective, marmalade, fig and burnt sugar-scented bouquet that gently unfurls in the glass. The palate is very well-balanced, with a viscous entry that lacquers the mouth. The acidity is very well-judged, lending the finish a sense of poise and tension that neatly counterbalances the richness and precocity.

Since 1865, this spicy, earthy aperitif has been known as “ouvre l’appétit” - the key to the appetite. Serious in its role as an aperitif, and then popular with sportsmen Bonal became an early sponsor of the Tour de France It is made by an infusion of gentian, cinchona (quinine) and renowned herbs of the Grande Chartreuse mountains in a mistelle base. While tradition is to drink neat with a twist, Bonal also mixes well with fresh or hard cider, sparkling wine, and Scotch or American whiskies. Excellent with hard, salty cheeses, salted nuts, or earthy, spicy foods.

Also pure perfection in a glass, the 2015 Vecina comes from an east-facing site located not far from the Harlan Estate. It was previously a terraced vineyard but was replanted when they opted to remove the terraces 7-8 years ago. Totally thrilling notes of crème de cassis, lead pencil, barbecue, white chocolate, and spring flower notes all flow to a full-bodied, powerful wine that has building tannins, no sensation of weight, hints of background oak, and incredible intensity and length. It’s a true “wow” wine that could not be better. Don’t miss it!
