Monks’ Reserve Ale pours a deep mahogany with a frothy and long-lasting tan head. It presents rich aromas of caramel, plums, dark cherries, dates, brown sugar, dark bread and a faint smokiness. The taste largely follows the nose with an elegant and pronounced maltiness dancing a playful tango: dark fruits, apple, molasses and candied sugar. A welcome and restrained bitterness prevents this Quad from being cloyingly sweet. Spicy phenols and a reappearance of an earthy smokiness also serve as an excellent counterpoint the fruity esters that dominate the initial tasting impression. Medium to full mouthfeel and perhaps slightly lighter than comparable brews such as Chimay Grande Reserve. The recipe was inspired by the traditional refectory ales known as patersbier (“fathers’ beer” in Flemish) in Belgium. These sessionable beers are brewed by the monks for their dinner table and are typically only available at the monastery. Each year we make a Chardonnay Pet Nat and it is always one of our favorites. We bottled this wine that was fermented in 50% neutral French oak and 50% tank until it was just about dry. We then racked it all into one large tank and dropped the temperature down to stop fermentation so we could bottle after harvest. Once we were ready, we raised the temperature back up and allowed the wine to kick off, finally bottling it while it was still fermenting and had 11 g/L residual sugar. The result is salty, delicious, and quaffable bubbles.

After being hand harvested, the pinot noir grapes remained on skins for 48 hours prior to a long and hard pressing. The juice settled overnight and then was racked into a fermenter with the whole sauvignon blanc berries. The ferment remained under a submerged cap for 18 days prior to a final pressing. The wine was then aged in neutral french oak barrels for ten months, prior to hand bottling.

Maimed in an accident that left him with a hunched back, Brother Joseph Zoettl worked in the St. Bernard Abbey power plant shoveling coal. In his spare time, Brother Joseph used found objects such as marbles and chunks of concrete and tile to build miniature shrines and buildings on the Abbey grounds. Over 40 years, he created 125 different models and replicas. Today, the Ave Maria Grotto covers three acres and is world-renowned as both a fun roadside attraction and an awe-inspiring collection of folk art.
