This little cheese has a big history! It started as a protein filled breakfast alternative for failed gold miners turned dock workers in the late 1800s. Harvest is done only by hand on this wine, and grapes are sorted and partially destemmed (40%). The vinification is in the Burgundy style, i.e. slow and soft grape pressing, and vatting for 10 days. Fermentation lasts one month and then the wine ages in large cement tanks. Marine makes Morgon, Julienas and Brouilly in addition to this glorious Beaujolais-Villages.

Upstream from Bordeaux along the Garonne River lie the vineyards of Buzet, just north of Armagnac and southwest of Cahors. Buzet was recognized as an Appellation in 1973, as it’s clay limestone soils are ideal for Merlot and Cabernet Sauvignon. Christophe tends to these vines with the utmost respect for biodiversity of the terroir and this cuvée is vinified without oak.
