Sage Canyon Red has a finished blend of 50% Carignan, 25% Grenache, 20% Mourvèdre, and 5% Syrah. Each lot of wine was fermented naturally using native, wild yeast, and the grapes were all crushed by foot so as to not break the stems left in the fermenting must. The finished wine is bright and flavorful, with a fascinating combination of mineral and earthiness. The Carignan fruit is stylish, incorporating elements of wild cherry, plum and black fig, while the Grenache and Mourvèdre add exotic aromas of wild herbs and lavender. Oddero is a seventh-generation winemaking family in the village of La Morra that's been making wine since the 18th century. This Barbera d'Alba is a perfect example of their winemaking style and it comes in at a fraction of the price of their Baroli bottlings. Coming from two plots of land in Castiglione Falletto and La Morra, these vines see south and southwest-facing vines that receive ample sunshine for ripening. Aging in used French oak casks of 50-60 hl rounds out this high-acidity grape varietal. Outstandingly fresh, with soft and ripe tannins, this Barbara shows fruit notes of blackberry, black plum, and cherry. Black pepper and licorice with a iron-like minerality enhance a palate with a long, extended finish.

German style Pils is brewed with European Pilsner malt using a traditional step infusion mash. During the boil it is hopped using German Tettanang & Spalt Select. After the boil it rests in our copper Coolship for one hour and is then transferred over our baudelot cooler. It undergoes a cool open fermentation for 9 days using a classic Pilsner yeast. It is cellared cold for several months prior to packaging.
