Meaning “hillside” in Portuguese, Encosta is the beginning. This Cabernet was originally created to showcase the youthful vibrancy of the vines planted by our team when the property was first acquired. With time, however, Encosta has become less about younger vines and more about showcasing the various expressions of our highly dynamic vineyard characteristics.
Tasting Notes: Encosta launches with an intense nose of black cherries, Framboise liqueur, and cherry blossoms. The aromatics continue to elevate with fragrant notes of strawberry preserves, violet crumble, orange zest and forest floor. Persistent and exuberant, the silky texture glides across the palate while the mouth-watering acidity builds and carries the brightness and elegance through the lengthy, flourishing finish. Remarkably integrated, the tannins are in attendance without being assertive. Reflective of the vineyard and resplendent growing season, this is a highly finessed wine that will continue to reveal itself with age.

When Alsatian clones of Pinot blanc became available in Oregon, a small test plot was planted in Eyrie’s Sisters Vineyard. The block was doubled in the late 1990s. The crop is picked by hand, destemmed, pressed, and run to small stainless steel tanks to ferment and age. We take a slow approach; our Pinot blanc ages 3-4 times longer than most commercial versions before bottling. This delicious dry rendition lightly carries the texture of extended lees contact while remaining crisp, fruity, and complex on the palate. Pairs well with oysters and raw foods. Named for being the 51st recipe entry into former brewer Dan's beer notebook, this pale ale is packed with hop flavor but not overly bitter. Harvest is done by hand to select the best fruit. Only the most mature berries are chosen, it is followed by a secondary selection to avoid any compromise on quality. Wild yeasts (pied de cuve) that are naturally present on the skins of the berries are used to obtain exceptional wines that really reflect the terroir with complex flavors and texture. After resting with the skins for 30 days, the juice is fermented in Troncais barrels of French oak barrels for 12-15 days with frequent pump overs. e wine then ages 18 months in Slavonian oak barrels and at least an additional 6 months in the bottle. The end result is a wine with garnet color with red fruit and cassis aromas with licorice, smoke and caramel notes with silky tannins.

Savoy Vineyard is perched above the Navarro River bench looking out at the last stand of old-growth redwoods in Anderson Valley.
