Produttori del Barbaresco Barbaresco has a subtle nose, some spice, green herb and bright, cherry notes, but just now it is not very forthcoming. In time, the nose opens a little to warm, spicy, dried fruits aromas. On the palate there is plenty of bright, juicy, mouthwatering acidity, although the wine feels a little leaner in the middle. This is a pretty, quite fragile style but very approachable and enjoyable, offering flavors of sun-dried fruit rather than fresh berries. It is refreshing and lively with gentle tannins and a tangy finish.

The color is rather intense salmon with plenty of tiny and vivacious bubbles. Quite extravagant on the nose, developed and mature as one might expect from an almost ten years old sparkling. We can find hay, dried herbs, flowers - almost like being on the lawn in the summer, some noble wood, balsamic and yeasty notes. Dry on the palate, vibrant, medium bodied, with intense character and touch of tannic grip. This is certainly not a classic aperitif-style sparkler but one that goes nicely with warm first courses and fish. In top condition.

QED Convergence is ripe and structured, with supple tannins and racy acidity. The complex bouquet consists of blackberry, kirsch, bacon fat, white pepper, cured meats, and grilled herbs. The palate is beautifully layered and complex: blackberry, huckleberry, kirsch dominate but notes of bacon fat, honeysuckle, truffle mushroom, Asian spices, and grilled herbs support. The racy acidity and substantial yet refined tannins provide a nice counterpoint to the fruit vibrancy. The very long finish echoes tones of kirsch, bacon fat, cured meats and white pepper.
