Paso Robles is situated along U.S. Highway 101 in the center of California’s Central Coast, halfway between San Francisco and Los Angeles. The grapes for Kay are from the Red Cedar Vineyard which is located 15 miles east of Paso Robles, entirely within the Paso Robles AVA. Sections of the vineyard are within two of the recently approved sub-AVAs: San Juan Creek and Paso Robles Estrella District. The rolling benchland (above the Estrella River) and terraced vineyard plantings at Red Cedar range from 500 to 800 feet above sea level. The vineyard is certified sustainably-farmed by the California Sustainable Wine-growing Alliance. Warm, dry days throughout the summer make it ideal for growing big bold reds with no holds barred-like Cabernet Sauvignon and Zinfandel. The warm climate—similar to the Napa Valley—builds power and structure in the grapes. Drought conditions continued for the 2016 vintage and yields were naturally low to downright tiny, which resulted in high quality low crop yields with concentrated flavor.

The near-perfect 2016 growing season started early and saw ideal weather conditions throughout. Thanks to a relatively mild July and August, followed by a series of warm days at the end of the growing season, the vineyards were able to progress to perfect ripeness.
WINEMAKING NOTES Our Estate Cabernet Sauvignon can be called Padrone’s favorite son. It inherited Padrone’s intense varietal aromas and concentrated flavor. Yet, because the grapes are sourced from several of our younger less rocky parcels with a variety of exposures, clones and soil types, it enjoys a softer tannin structure. This wine was aged for 19 months in 80% new French oak and was not fined or filtered prior to bottling.
WINEMAKING NOTES: Padrone is created in honor of Ray Signorello Sr., a visionary whose life was as full of character as our wines. It is a seamless integration of supple tannins, intense varietal aromas and rich flavor that expresses the utmost quality of the Estate. The grapes for this proprietary Cabernet Sauvignon are sourced from the best blocks of our extremely rocky hillside vineyard. To preserve fruit intensity and body, the wine was not fined or filtered prior to bottling.
This 2015 Cabernet Sauvignon has been blended from Cabernet Sauvignon and small amounts of Petite Sirah and Syrah sourced from cool-climate growing regions of California. The wine is deep ruby in color with a medium body and soft, ripe tannins. It opens with aromas of black cherries, blackberries, and cassis with hints of cigar box, black pepper, vanilla, toasty oak, and French roast coffee. Flavors of Bing cherries, plum, vanilla, coffee, and toasty oak, lead to a long finish. Enjoy with roasted or grilled meat, hearty pasta, and strong cheeses.

Heady aromas of blackberries, crushed pecans and cocoa nibs are met with fine and polished tannins which exemplify the beauty of this vintage. On the palate, notes of raspberry are complemented with lingering acidity and a finish of dusty, silky tannins. Given proper cellaring, this wine will provide drinking pleasure through 2036.
Each year, the goal for Southing is to create the ideal marriage of complexity and elegance. The ever-changing nose of the Southing exhibits dark fruits, such as Blackberry and plum skin, as well as some baking spice and fresh flowers (Violet & Lilac). The fine tan- nins and minerality are enhanced by our estate vineyard’s characteristic cool climate acidity.

Hand harvested in late August of 2012, the Pinot Noir for this methode champenoise sparkling wine is the result of a careful cluster selection from Sea Smoke’s estate vineyard. The grapes were gently pressed following an evening in our cold room, then transferred to stainless tanks to begin a long, cool fermentation, which was completed in once-used and neutral French oak barrels. Following nine months of sur lie aging in barrel, the wine was bottle aged an additional 24 months en tirage prior to disgorging. The wine was finished with no dosage, to preserve its finesse.
The nuanced nose expresses lilies, fresh pastries and green fig. The wine enters the palate with energetic freshness with delightful length.
Vibrantly aromatic this wine jumps from the glass with ripe peach and tropical fruit as a theme.
