Charles Audoin Aligote

The Bourgogne Aligoté is sourced from a 90-year-old plot of vines in Marsannay. The fruit undergoes a cold soak prior to fermentation, for which it is then transferred to neutral oak barrels. This process imparts a roundness that overlays Aligoté's traditionally firm acidity. As more and more producers are taking Burgundy's 'other white grape' seriously, it's important to know the benchmarks, and Domaine Audoin's iteration certainly falls in that category.
