QED Convergence is ripe and structured, with supple tannins and racy acidity. The complex bouquet consists of blackberry, kirsch, bacon fat, white pepper, cured meats, and grilled herbs. Nuances of gravel, and tar can also be noted. The palate is beautifully layered and complex: blackberry, huckleberry, kirsch dominate but notes of bacon fat, honeysuckle, truffle mushroom, Asian spices, and grilled herbs support. The racy acidity and substantial yet refined tannins provide a nice counterpoint to the fruit vibrancy. The very long finish echoes tones of kirsch, bacon fat, cured meats and white pepper.
