Saldo doesn’t fit in, but that doesn’t matter. When you’re from “here and there” (that’s what Saldo means in Latin), you don’t need to form to one, single place. That’s the funny thing about expectations—they’re made to be broken.

85% Sauvignon Blanc, 15% Chardonnay
Cheverny a value alternative to Sancerre would completely overlook the virtues unique to this appellation. It is a much zippier expression of Sauvignon Blanc compared to its famous neighbor, more citrusy than grassy, while the addition of some Chardonnay in the tank adds a lovely peachy note. A brisk, zesty white like this brilliantly complements a lunchtime salad of whatever fresh produce you can get your hands on, such as cucumber and avocado, abundantly seasoned with a medley of shredded herbs like basil, mint, and cilantro.

Blanc de Noirs (white from black) is the counterpart to Blanc de Blancs (white from white). Made primarily from the red grape Pinot Noir, this is a complex, medium-bodied, brut sparkling wine. Schramsberg pioneered the Blanc de Noirs style in the United States, releasing the first such American sparkler in 1967. The key to producing this complex Blanc de Noirs is our vast and varied focus on diverse cool-climate vineyards. Pinot Noir from Carneros and Anderson Valley combine with fruit from low-yielding Sonoma and Marin coastal vineyards to develop a sparkling wine with a breadth of fruitful aroma and flavor. Select Chardonnay lots give zest and backbone to the blend.

Uncanny and delicious. This vintage is done in a new 2,000-liter cask, with a tiny dose of Riesling to give it some yin; it’s a friend-making wine, yummy and varietal; a bit woodsier than the last couple vintages, and perhaps a little less overtly slatey, but it’s also chummier. Hard to imagine a fish chowdah without this bad boy to wash it down...
