The Bourgogne Aligoté is sourced from a 90-year-old plot of vines in Marsannay. The fruit undergoes a cold soak prior to fermentation, for which it is then transferred to neutral oak barrels. This process imparts a roundness that overlays Aligoté's traditionally firm acidity. Condrieu has the best terroir in the world for the Viognier grape. That is not to say, however, that it is easy to make great Viognier here.
