Made from sustainably farmed Chardonnay harvested from three sites -- Des Couverts (in the village of Chablis), Prehy (near Courgis), and Lignorelles, this racy, mineral-driven white opens with classic notes of ripe apple and lemon blossom. Focused, yet generous on palate, the wine is incredibly balanced, with a long and lovely finish. This is a classic white for all seasons, that can stand on its own as an aperitif or with pork, poultry, and even roasted salmon or sea bass.

An arpent is an antiquated land measurement that predated the French Revolution, and Jean–François uses this term to refer to several small parcels of 60-year-old Sauvignon Blanc that are the foundation for this cuvée. It is harvested by hand, fermented by indigenous yeasts in stainless steel tanks, and aged in tank for seven months with some lees stirring.
