The Vacheron cousins own 1 hectare of vines in the lieu-dit of Le Paradis. Their plot is on a steep south-facing slope with shallow limestone soils. The soil is so thin and poor that the vine roots grow deeply into fissures in the bedrock below. Le Paradis is an explosively aromatic wine, dense on the palate with a broad mineral character kept in check by a sinuous acidity that keeps things lively.

Initially, the classic Awatere aromas jump out of the glass, such as lemongrass, jalapeño peppers and fresh herbs. The cool climate in the Awatere Valley is influenced by Mt Tapuae-o-uenuku and the cool alpine winds and fresh sea breezes protect the natural acidity in this wine. In contrast, the Wairau Valley has warmer summer months, with dry nor-westerly winds influencing vineyards to produce a pungent Sauvignon Blanc with ripe citrus and tropical fruit flavours.

This well-balanced Sauvignon Blanc is sourced from cool-climate vineyards in the southern end of the Sonoma Coast AVA. The Grossi vineyard north of Petaluma contributes spice and bright, tangy acidity. The Leveroni vineyard south of Sonoma adds the unique floral character of the Sauvignon “musqué” clone. The resulting blend has a bouquet of lemon and grapefruit zest, leading to lush fruit flavors of white peach, passion fruit, and honeydew melon. Chambrates is located on a plateau above Le Paradis on limestone and red clay soils. This is a generous example of Sancerre due to its terroir with more of a citric quality to the fruit, a richer texture and a mineral finish. It is fermented and aged for 12 months in large French oak vats.
